This sake is the unpasteurized, unfiltered, undiluted version of our Hojo no Mai (“Dance of the Harvest”) series—
presented exactly as it was born: raw, vibrant, and filled with potential.

Brewed in open-top tanks and bottled directly after pressing,
this sake reflects the fermentation of nature and the spirit of the year.

No heat. No added water. No filtration.

Each bottle bears its brew year (BY), because we believe the taste should reflect
not just the rice and water,
but the weather, the microbes, and the hands that guided it.

This is not sake meant to last forever—
but sake meant to capture right now.
