this Yamahai-style Tokubetsu Junmai has aged gently in cold storage—
sometimes for one, two, even three years.

Challenge AGING – Letting Time Become the Craftsman

At Ito Shuzo, we call this approach Challenge AGING.

Using open-top fermentation tanks and Yamahai methods,
we bottle the sake naked—unfiltered, unpasteurized, unaltered.
Then we let it rest, slowly, in cold cellars.

Like vintage wine, we label each bottle with its brew year (BY)
a testament to the rice, climate, and craft of that year.

In time, sake transforms—not by erasing flavor,
but by drawing it into harmony.
