Uzume Junmai Daiginjo Shizuku Nama
A Living Drop, Bottled in Stillness
The essence of life, drop by drop
In the chilled quiet of the brewery, one drop falls.
Then another.
No machines. No force. No urgency.
“Uzume Junmai Daiginjo Shizuku Nama” is born only from the natural dripping of sake from traditional bags—
a technique known as fukuro-shibori, or gravity drip pressing.
And this sake is captured exactly as it falls:
unpasteurized, unfiltered, untouched.
A sake that feels alive.
A sake that awakens the senses
With a 40% polishing ratio,
its aroma remains gentle and low-toned—never loud, never distracting.
The umami is soft and fluid, with a transparency that defies explanation.
As the temperature rises,
the texture evolves—layer by layer on the tongue.
A sake that feels strangely familiar, even at first sip.
It doesn’t surprise with intensity,
but rather loosens the heart with quiet clarity.
For those who appreciate delicacy
Yes, it requires care in transport and storage.
Yes, it demands to be kept cold.
But for those who welcome that fragility—
this sake offers something unforgettable.
About Bag-Pressed Shizuku Sake
“Fukuro-shibori” is a traditional method where fermented mash (moromi) is gently poured into hanging cloth bags.
The sake then drips slowly, drawn by gravity alone.
No machines.
Just silence.
And the soft plip… plip…
on the wooden floor.
The sake collected in this way is called shizuku, or “droplets.”
It is the most refined, delicate expression of sake.
When bottled unpasteurized—nama—
it becomes a snapshot of the living fermentation itself,
a rare and vibrant experience.
