About Bag-Pressed Shizuku Sake

“Fukuro-shibori” is a traditional method where fermented mash (moromi) is gently poured into hanging cloth bags.
The sake then drips slowly, drawn by gravity alone.

No machines.
Just silence.
And the soft plipplip
on the wooden floor.

The sake collected in this way is called shizuku, or “droplets.”
It is the most refined, delicate expression of sake.

When bottled unpasteurized—nama
it becomes a snapshot of the living fermentation itself,
