Each bottle is crafted to cradle those precious fragments of time
with gentle indulgence and natural elegance.
Born from Tokaji. Inspired by Sauternes.
It began with a daughter’s fascination with the noble rot wines of Hungary and France.
The harmony of sweetness, acidity, and umami in Tokaji and Sauternes stirred her imagination.
She brought this vision to her father—the brewery master—
asking: “Can we express this echo… in sake?”
From this conversation, Relaxation was born:
a new category of naturally sweet sake—
no added sugar, just fermentation, time, and depth.

These sakes are delicately sweet yet rich in structure,
designed with the same philosophy as a fine dessert wine—
natural sweetness, balanced acidity, and a long finish.
The result is additive-free, sugar-free sake that pairs not only with traditional meals,

Rather than categorize by grade or milling ratio,
the Relaxation series speaks in Levels—
each a sensory cue to the kind of moment it complements.
Level Design Criteria:
- Sweetness, acidity, aroma, echo (lingering finish)
- Maturity (fresh vs. aged)
- Ideal pairings (appetizer / main / dessert)
- Emotional impact and memory
- Narrative value: a gift, a story, a signature of time

All rice is grown within a 12-mile (20km) radius of the brewery.
We work with local farmers, season by season,
tasting rice before we taste sake.
What’s more—
the water that feeds the rice paddies
is the same water we use to brew.
