Uzume Tokubetsu Junmai Yamahai Aged – Unfiltered Nama Genshu
Savor a Flavor that Grows with Time
A matured sake, alive with warmth and depth
At first sip, it is calm. Deep. Softly enveloping.
A mellow acidity, polished by time.
This sake offers not the sharp edge of youth,
but the quiet satisfaction of flavors that have grown.
Bottled unfiltered, unpasteurized, and undiluted (nama genshu),
this Yamahai-style Tokubetsu Junmai has aged gently in cold storage—
sometimes for one, two, even three years.
No heat. No shortcuts.
Only time, temperature, and silence.
The beauty of an evolving sake
What makes this sake special is not that it is “complete.”
It is that you can taste its growth.
With each passing year, the structure softens,
the umami deepens, the aroma folds inward—
layer upon layer, like a life story quietly unfolding.
It is not about perfection.
It is about presence.
Challenge AGING – Letting Time Become the Craftsman
At Ito Shuzo, we call this approach Challenge AGING.
Using open-top fermentation tanks and Yamahai methods,
we bottle the sake naked—unfiltered, unpasteurized, unaltered.
Then we let it rest, slowly, in cold cellars.
Like vintage wine, we label each bottle with its brew year (BY)—
a testament to the rice, climate, and craft of that year.
In time, sake transforms—not by erasing flavor,
but by drawing it into harmony.
Tasting Experience
This sake pairs beautifully with dishes that reflect its calm strength:
- Simmered or grilled Japanese fare
- Salted meats or umami-rich broths
- Aged cheeses with subtle complexity
Enjoy it slightly chilled or gently warmed (nurukan)
to reveal its layered character.
