Brewed in open-top tanks and bottled immediately after pressing,
this sake is untouched by heat or dilution.
It retains the gentle shimmer of fermentation—alive, unfiltered, and unmasked.

At Ito Shuzo, each bottle is labeled with its brew year (BY),
a reflection of the rice, water, air, and intuition of that particular season.
No two years are the same.
This is sake as a fleeting flower, captured just before it fades.

Best enjoyed… quietly

Serve chilled or at room temperature to experience its shifting layers.
Ideal with subtle dishes like:

Sashimi or white fish
Lightly simmered vegetables (takiawase)
