A loaf born from rice, water, and time—fermented with the same philosophy as our sake.
This is bread designed to resonate with AWASAKE.

Take a bite, and you’ll notice a soft, natural sweetness from the rice.
The crust is crisp and aromatic. The inside? Moist, springy, and deeply satisfying—like a Japanese-style brioche.
The umami from sake rice flour and the minerality of whole grain spelt unfold with every chew.
It’s so rich in flavor, you’ll want to keep eating it just as it is—no butter, no spreads.


🍞 A Gift from the Brewery, Made of Rice

No eggs, no dairy, no sugar, no oil.
Just sake rice flour, whole grain spelt, and strong wheat flour—combined using a traditional yudane method for a springy, moist crumb.
The yeast? Our own brewery-cultivated starter, drawn from sake fermentation.
This is a loaf made for pairing with AWASAKE or Relaxation sake—equally at home on a Western plate or a Japanese table.


🧑‍🍳 Baked by the Okami, in the Brewery

This loaf is handmade by the okami of Ito Shuzo using their own sake rice flour,
high-ash-content bread flour (Nishinokaori from Mie), and rare spelt whole wheat.
No additives, no animal products, no shortcuts.
Just fermentation, instinct, and craftsmanship passed down from sake-making.

After countless trials, this recipe emerged as the perfect partner:

  • Mie-grown strong flour (Nishinokaori) with a mineral finish

  • Sea salt from Mie’s coast
  • Natural sake yeast, hand-raised in our brewery
