Uncut, Unfiltered, Uncompromised.

Unlike most sake, this genshu (undiluted sake) is bottled without water adjustment.
That means its richness, aroma, and lingering finish remain intact—even when poured over ice or mixed with soda.

At 20.9% alcohol, it also qualifies under Japanese law for safe home infusion.
You can steep seasonal fruits like plums or peaches directly into the sake—no sugar needed—bringing out a fresh, natural sweetness and aroma.

It all started in a papaya field.

During a visit to a local farm that grows papaya for our sake lees pickles, we came across unripe green peaches.

Someone said, “Could these be used for something?”

We decided to try steeping them in Genshu 209—and were stunned.
Even unripe, the peaches released an intensely vibrant fruit aroma.

Later, we tried ripened peaches—and were amazed again.
Same fruit, entirely different expressions.

This is not just “sake for plum wine.”
