With a sake meter value (SMV) of +15 and an alcohol content of 20.9%, it sounds like a fireball on paper.
But in the mouth?

“This isn’t just dry. It’s umakara.”

And so, its name was born.


This sake wasn’t crafted by calculation. It simply became.

Brewed using the traditional yamahai method in an open-top tank, the fermentation was guided only by nature: the rice, the microbes, the climate, and the quiet rhythm of the kura.
No shortcuts. No forced control. Just patient listening and timing.

What emerged was a rare equilibrium—
Not by design, but through natural alignment.
It was then gently pasteurized and bottled as-is, undiluted, and unfiltered.

This is a limited-edition genshu that captures a moment of spontaneous perfection.

Its origin shares the same foundation as our flagship “Uzume Hōjō no Mai,”
a yamahai junmai beloved for its softness and versatility at all temperatures.
