About “Bag-Pressed” Sake (Fukuro-shibori)

Bag-pressing is a time-honored method in which the fermented mash (moromi) is placed into cloth bags and left to drip naturally.
No machines. No pressure. No haste.
Only gravity.

In the quiet of the brewery, the only sound is the soft drip… drip…
Each drop carries the memory of the rice, the flow of time, and the stillness of fermentation.

Shizuku-zake refers to sake made only from these gravity-drawn drops.
And when left unpasteurized—nama—it becomes a living expression of sake at its most vivid.
