it is rare to find a Kuramoto Toji — a brewery owner — who not only inherits the house, but also crafts with his own hands and expresses its legacy through the Art of brewing.

He is the fifth-generation heir of ITO Sake Brewery.
But more than that,
he is an artisan of inheritance.

To him, sake is not just something to preserve.
It is something to question, to feel, and to create. Every bottle becomes a canvas ; every brew, a quiet act of expression.

In a world where roles are often divided—
between owner and maker, leader and doer—
he stands as a rare fusion of all.

Guided by nature, informed by time,
and driven by a deep, unshakable question:
“What is UMAI, truly?”

His journey continues—
not as one who simply carries on a name, but as one who gives it new shape with every drop.

We wish to remain a brewery that you can visit when something inside you quietly says, “I’d like to go.”

Not an exclusive place—

In 2002, the fifth-generation owner and his wife renovated a 200-year-old earthen storehouse with their own hands.
That space became BOKURA—
a community-rooted gallery and direct shop in the heart of Yokkaichi.
